Saffron is a valuable food that is obtained in small quantities from the saffron plant. In fact, from every 100 to 200 thousand saffron plants, about 5 kilograms of saffron flowers are obtained, and the weight of 5 kilograms of fresh saffron reaches one kilogram after drying.
The aroma of saffron is due to the presence of a colorless essential oil containing tropene and an oxygenated compound with cineol called safranal. The taste of saffron is related to the bitter heteroside picrocrocin. The color of saffron is related to the presence of a substance called crocin.
The nature of saffron is hot and dry, and it is mostly used in different ways, including saffron powder and other types to prepare soups and hot drinks. This plant usually grows in autumn and is found in sizes of 25 to 30 mm, which gives a special effect to agricultural fields and plains in autumn.
